Continuing our occasional series on Greek cheeses, Manouri is a popular cheese produced in Thessalia and Central and Western Macedonia.
It is a semi-soft fresh white cheese made from the drained whey
from feta production and is much less salty than Feta. It can be used in salads, pies or as a dessert. One popular light dessert is manouri served with honey and walnuts - fruit can also be added.
