This is a recipe for another Greek spoon sweet, this time made with Quince - an often underrated fruit, but which has a wonderful taste!
Ingredients
1kg quince
1kg sugar
Juice from
1 lemon
500ml
water
Preparation
Peel the
quince and remove the seeds and the hard centre.
Finely
slice the quince and put them straight in a bowl with water and half the lemon
juice as you are doing this so that they don’t blacken.
Drain the
quince and put it in a pan with the 500ml water and the sugar.
Bring to
the boil and continue boiling for another 10 minutes.
Remove
from the heat, cover and leave for 24 hours.
After the
24 hours, bring to the boil again and continue until it has a syrupy
consistency.
Add the
remaining lemon juice, mix it in and remove from the heat.
Put in
sterilized jars.
